Bucket list...

Do you have a "bucket list"? You know..the things you'd like to do before you "kick the bucket". I don't have a written list (though I am a list maker.. I'm suprised I don't actually have one.) But in my mind, my bucket list includes many things; two of them were fulfilled this past Saturday.

I have always wanted to see the Boston Celtics play in person. My wonderful son Scott gave me 2 tickets for my birthday last December. The game was this past Saturday and, of course, I brought my husband. The Celtics could not have played a worse game...they were pitiful and lost to the team with the worst record in the league.   But it was a great experience and I would love to go again.

My next bucket list wish was to wear size 8 jeans.  I bought new jeans on the clearance rack at Macy's a few weeks ago. ...size 8.  They were dirt cheap... less than $7.00 so I figured if they didn't fit it wouldn't be a great loss.  I put them on Saturday and they fit perfectly...they were 3" too long, but that's nothing new.  I was happy to hem them and wear them to the basketball game.  I would have been content to wear a size 10 for the rest of my life...but fitting comfortably into size 8 jeans is more than I could have hoped for.

New kitchen gadget

My daughter bought me a very useful 'gadget' for Christmas. An apple slicer! I've seen them for years, but never bought one. What a neat tool... I love apples but always hated biting into know, all the peel gets into your front teeth...yuck! This cores the apple and slices it for you.


New food find..

I discovered a new veggie in the frozen food section. They are both portion controlled and super delicious. Pop in the microwave for 2 1/2 minutes...and voila! There are a few other varieties also. I chose these because they have NO points!

My favorite soup

I've been making this soup since last fall...nothing better on a cold day than a bowl of hearty, healthy soup!

Here's what goes into my 'kitchen sink' soup:

3 cups Vegetable "Stock-in-a-box"
1 cup V8 Juice
1 can Great Northern Beans or Navy Beans
1 can Petite cut diced tomatoes
2 cups chopped zucchini
3 stalks celery, chopped
1 medium onion, chopped
1 cup mixed frozen vegetables (corn, carrots, green beans)
1 cup green beans (frozen)
2 cups baby spinach
1/4 tsp crushed red pepper flakes
1/2 tsp oregano
salt and pepper to taste

Combine in a stock pot, cover, and cook until the veggies are tender. I usually let it simmer for at least 2 hours.

It will yield about 6 2-cup servings. I portion them out into 2 cup containers and freeze them.

This works out to be a 2 point meal for 2 cups. Not bad!

FINALLY...a loss...not a huge loss...but I'll take it.

Weight Watcher Wednesday - Week 55

Well, darn (trying to keep bad words from shooting out my mouth)...I had a great week...just was so hungry over the weekend. I made the mistake of buying a bag of peanuts (in a shell). BIG MISTAKE. I cannot be trusted with shelled peanuts. So today, I threw them out into my yard and figure the squirrels will think it's Christmas.

Weight Watcher Wednesday Week 54

It was a good week... did another 5K at the gym last Friday. My time was a little better than the week before. I've got to get new headphones of the ear pieces kept shocking the inside of my ear...that hurts!! It doesn't happen on other equipment, just the treadmill.

I have finally lost all the weight I gained over the holidays...and as of today, I have 8.8 lbs to go to get to my GOAL!

my Goal...

Today I decided that weighing 135 lbs will be my Weight Watcher goal. I had initially thought I'd like to be 130 lbs, but really...those 5 lbs are not going to make a difference in my clothing at this point.

So...I have (as of today, January 27, 2010) 10 lbs to lose to reach my goal. Once I do that and maintain that for 6 weeks, I will become a Weight Watcher lifetime member. Anyone who is a WW member knows that is like winning the gold medal in the Olympics!!

I got my mojo back! I've been working hard at the gym and either running/walking on the treadmill most evenings for another 30 minutes. I want to get to my goal by spring and I'm re-energized!

I ran a 5K!

Well, I ran it on the treadmill at the gym! but it still counts. The treadmills are programmed for different things one of which is a 5K. So, I decided to see how far I could actually run it. I did the 5k (3.1 miles) in 46:41 and ended up running 38 of those 46 minutes. I was shocked that I could run that long. I knew I'd finish the 'race', but figured I'd walk more of it.

I decided that every Friday I will run this 5K and see if I can better my time. When the weather warms up, I'll be running outside.

Gosh...I hope that at 56 years young I'm not too old to take up jogging! (though I did buy 2 new workout at least I look good while doing it!)

New food...

I decided to try something new this week. BOCA burgers.

I have to say, I was pleasantly surprised. I worried not only about the taste, but also the consistency. I chose this flavor for no particular reason. It was low in calories and fat, and had a lot of protein.

I grilled it in a non-stick pan and put it on a toasted deli thin 'roll'. I added some grilled onions, tomato slice, lettuce and of course, ketchup and mustard. I LOVED it. whodathunkit? In fact, they were on sale at my local supermarket this week so, I bought 4 packages.

The second time I had one, I put a little bar-b-que sauce on it while grilling it...another good choice.

Weight Watcher Wednesday - Week 52 wasn't a great loss, but I'll take it. I was diligent in tracking all my food intake this week. I've incorporated more vegetables into my everyday diet and now include a baby spinach salad with carrots and tomatoes along with 1 tsp of olive oil and red wine vinegar as salad dressing every evening with dinner. I had forgotten how much I like baby spinach!

(still have 3 lbs to lose to make up for the gain earlier this month. I'm working harder at the gym these days, hopefully those 3 lbs come off quickly so I can get to my goal.)

Well...this isn't going well at all. Had another slight gain this week. I'm not sure what's happening. I need to regroup ..again.

Weight Watcher Wednesday - Week 50

Well...I seem to have lost my "mojo". This cold weather is getting me down. I still exercise daily...but I was so hungry last week. I didn't splurge on anything 'sinful'...just ate more of what I usually eat and that resulted in another gain.

But, I've regrouped (as they say) and feel as though I'm back on track. My life is back on schedule and I hope that will make the difference. It's hard enough to lose I have an extra 3+ lbs to lose again!

I'm not discouraged..I've come too far.
